I marinatated a couple of tri tips today for a couple of hours. The marinade was made with to taste cinnamon, ground red pepper, black pepper, and salt. I then put an 1/8th of a cup of cocoa powder, a 1/4th of a cup of maple syrup, and 2 tbsp of dijon mustard. Don’t forget to poke holes in the steaks to get the chocolate marinade infused into the meat.
After marimarimg I put them in the smoker at 225° for two hours and 15 minutes. The internal temperature reach between 135° and 140°. Below are some visuals to drool over. Just kidding, but I thought I would share incase someone would like to try it.
